Pakoda Kadhi

Ingredients

  • ½ Cup Gram Flour for Kadhi(Besan)
  • 2 Cup Yogurt (Curd).
  • 4 ½ Cups water.
  • 2 tbsp Oil (for cooking and tadka).
  • ½ a pinch Asafoetida (Hing)
  • 3/4 tsp Cumin Seeds.
  • 1 tsp grated Ginger.
  • 1/4 tsp Fenugreek Seeds (Methi)
  • 3 Green Chillis
  • 1/3 tsp Turmeric Powder
  • 1/3 tsp Red Chilli powder
  • 1 tsp Salt
  • 1 Cup Gram Flour for Pakodras.
  • 100 grams Oil (for frying pakoras).

Instructions

  1. Prepare Pakora Batter - Take 1 cup of gram flour in a bowl. Add water gradually and mix well to form a smooth, lump-free batter that is neither too thin nor too thick. Cover and rest for 20 minutes.
  2. Prepare Kadhi Mixture - Blend ½ cup of gram flour and 2 cups of yogurt in a mixer jar until smooth to create the kadhi batter.
  3. Fry the Pakoras - Whisk the rested pakora batter vigorously for 4-5 minutes. Heat 100 grams of oil in a pan over medium heat. Drop small, round portions of the batter into the hot oil using a spoon or your hands. Fry on medium heat, turning occasionally, until golden brown on all sides. Remove and set aside.
  4. Cook the Kadhi - Heat 1 tbsp of oil in a pan. Add cumin seeds, grated ginger, fenugreek seeds, and green chillies. Sauté lightly without letting the spices darken. Pour in the kadhi batter along with 4.5 cups of water. Cook on high heat, stirring continuously. As you stir, add the turmeric powder and coarsely crushed red chilli. Bring the mixture to a boil.
  5. Simmer with Pakoras - Once boiling, stop continuous stirring. Add the salt and the fried pakoras. Reduce the flame to low-medium and let it simmer for 10-12 minutes, stirring occasionally. Transfer the cooked kadhi into a serving vessel.
  6. Prepare and Add Tadka - Heat 1 tbsp of oil in a small tadka pan. Add ¼ tsp of cumin seeds, a pinch of asafoetida, 2 whole red chillies, and curry leaves. Turn off the flame, then mix in the Kashmiri red chilli powder. Pour this tempering over the kadhi and stir lightly.
