Baingan Ka Bharta

Ingredients
- 2 large eggplant (baingan)
- 2 tbsp oil
- 1 tsp cumin seeds
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- 2 tomatoes, finely chopped
- 1 tsp coriander powder
- 1 green chili, finely chopped
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Roast the eggplant over an open flame until the skin is charred and the flesh is soft.
- Let it cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. When they splutter, add onions and sauté until golden brown.
- Add ginger garlic paste and sauté for a minute.
- Add tomatoes, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
- Add the mashed eggplant to the pan and mix well. Cook for another 5 minutes.
- Garnish with fresh coriander leaves and serve hot with roti or rice.
