Baingan Ka Bharta

Ingredients

  • 2 large eggplant (baingan)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tsp ginger garlic paste
  • 2 tomatoes, finely chopped
  • 1 tsp coriander powder
  • 1 green chili, finely chopped
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Roast the eggplant over an open flame until the skin is charred and the flesh is soft.
  2. Let it cool, then peel off the skin and mash the flesh.
  3. Heat oil in a pan and add cumin seeds. When they splutter, add onions and sauté until golden brown.
  4. Add ginger garlic paste and sauté for a minute.
  5. Add tomatoes, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
  6. Add the mashed eggplant to the pan and mix well. Cook for another 5 minutes.
  7. Garnish with fresh coriander leaves and serve hot with roti or rice.
